Baked Chicken & Bacon

I must have ‘panic-bought’ a lot of bacon 🥓, because the freezer if full of it! And, because I always have some chicken breasts in the same compartment, I thought I’d combine the two for a new (for me) dinner. This recipe is easy to make. The sugar coating with the bacon gives the whole dish a nice sweetness and smokiness. We served it with boiled (and buttered) potatoes and corn, which went down well with the whole family. Quickly consumed and no complaints.

Feeds 7 hungry mouths.

INGREDIENTS:

  • 4 large chicken breasts
  • 12 pieces streaky bacon
  • 1/4 cup vegetable oil
  • 1/4 cup brown sugar
  • 2 tsp paprika (smoked)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp salt

METHOD:

  1. Preheat oven to 375F.
  2. Mix together oil, sugar, and spices into a paste. Apply liberally over the chicken breasts.
  3. Wrap each chicken breast in 3 pieces of bacon, placing them seam-side down in a casserole dish.
  4. Bake 25-30 minutes. For the final touch, broil on high for a further 5 minutes at the end for extra crispy bacon.
  5. Serve with some potatoes, rice, and/or vegetable on the side.
