I must have ‘panic-bought’ a lot of bacon 🥓, because the freezer if full of it! And, because I always have some chicken breasts in the same compartment, I thought I’d combine the two for a new (for me) dinner. This recipe is easy to make. The sugar coating with the bacon gives the whole dish a nice sweetness and smokiness. We served it with boiled (and buttered) potatoes and corn, which went down well with the whole family. Quickly consumed and no complaints.
Feeds 7 hungry mouths.
INGREDIENTS:
- 4 large chicken breasts
- 12 pieces streaky bacon
- 1/4 cup vegetable oil
- 1/4 cup brown sugar
- 2 tsp paprika (smoked)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp pepper
- 1/2 tsp salt
METHOD:
- Preheat oven to 375F.
- Mix together oil, sugar, and spices into a paste. Apply liberally over the chicken breasts.
- Wrap each chicken breast in 3 pieces of bacon, placing them seam-side down in a casserole dish.
- Bake 25-30 minutes. For the final touch, broil on high for a further 5 minutes at the end for extra crispy bacon.
- Serve with some potatoes, rice, and/or vegetable on the side.
