
There’s no little story here. This is a simple and quick way to cook chicken, topped with a flavourful sauce. I served it with rice and some green beans. The kids loved it.
Feeds 7 mouths.
INGREDIENTS:
- 4 large chicken breasts
- 1 litre chicken stock
- 2 bay leaves
- 1 tsp peppercorns
- 1 tsp thyme
- 2 cloves garlic, crushed
Garlic-Herb Sauce:
- 1/4 cup olive oil
- 1 tbsp white wine vinegar
- 1 tbsp dijon mustard
- 1/2 tsp dried parsley
- 1/2 tsp dried basil
- Salt and pepper to taste
Honey-Soy Sauce:
- 1/4 cup soy sauce
- 3 tbsp honey
- 1/2 tsp sesame oil
- Salt and pepper to taste
- Cornstarch to thicken
METHOD:
- Place chicken breasts in large pot. Cover with chicken stock. Add peppercorns, crushed garlic, and bay leaves. Bring to boil. Cook 5 mins, then cover and simmer for 15 mins.
- Meanwhile, make one or both sauces.
- Remove chicken and slice.
- Serve with rice and drizzle with sauce. Enjoy!
